A quick and easy way to make a super crisp, extra thin crust pizza in under 15 minutes from start to finish. Using flour tortillas as the base for the pizza means you don't have to spend time making, stretching, or rolling your own dough.
Cooking Instructions

Adjust oven rack to 6 to 8 inches below broiler element and preheat broiler to high. Heat oil in a large cast iron skillet over high heat. Turn off heat and wipe out excess oil with paper towel.

Place tortilla in skillet with the rougher textured - side facing down. Spread sauce evenly over tortilla all the way to the edges. Spread mozzarella and half of parmesan evenly over tortilla all the way to the edges. Sprinkle with onion and bell pepper. Lay pepperoni and sausage chunks over pizza.

Place skillet under broiler and broil until cheese is melted and starting to brown in spots, 2-4 minutes. Remove from oven and sprinkle with remaining parmesan cheese.

Set pan on stove top and turn heat on medium to cook the bottom to brown and crispy. Using a small spatula, gently pry edges of pizza, releasing the cheese from the skillet. Slide pizza out onto cutting board. Cut and serve immediately.

I started out making these in my toaster oven I've obtain a nice torch and have been crisping my tortillas first then adding the ingredients and melting the cheese with the torch it's a little bit quicker. And with my Weber grill I have a pizza stone pizza oven convert system on it and is it good when I make it with oak it comes out slightly smoky so so good we cannot get enough of them we actually have grilled pizza night everybody picks ingredients throws it together and I start pumping them out of the grill there small light and you could eat a few of them no problem so we usually cut them in fours and share them to experience it of everyone's creations. If, like myself, you would consider yourself a pizza addict then this is the perfect recipe for you. It's a very healthy alternative to pizza that won't ruin your diet.
