Ingredients

  • 6 ozchicken breast
  • 1/8 cuptomato
  • 3 tbspmayonnaise
  • 1/4 cupall-purpose flour
  • 1 tbspgrated parmesan cheese
  • 1 tspcrushed red peppers
  • 1/8 tspground black pepper
  • 1/8 tspcayenne pepper
  • 2 pinchsalt
  • 5cilantro

    In bowl, combine flour, parmesan cheese, crushed red pepper flakes, ground black pepper, cayenne pepper, and salt.

  2. 2

    Spread coating out 12"x12" piece of aluminum foil.

  3. 3

    Take 3 tablespoons mayo, place on plate and spread out.

  4. 4

    Take chicken breast, place in mayo, then press into coating. Flip, and repeat.

  5. 5

    Place coated chicken breast in pan over low heat. Flip carefully as to not disturb crust. Occasionally sprinkle coating over chicken breast as cooking.

  6. 6

    Cut 1 slice of tomato and dice. Rinse cilantro.

  7. 7

    Remove chicken from heat, place on plate. Top with diced tomato and cilantro.
