Ingredients

  1. 2 cupsemisweet chocolate chips
  2. 1/3 cupcoffee liqueur
  3. 1 tbsphoney
  4. 1(9 inch) chocolate wafer pie crust
  5. 1(16 ounce) block silken tofu
  6. 1 tspvanilla extract ( I use extra )

Steps

  1. 1

    Place a small metal bowl over a saucepan filled with simmering water.

  2. 2

    Melt the chocolate chips and coffee liqueur in the bowl.

  3. 3

    Stir in vanilla.

  4. 4

    Combine the tofu, chocolate mixture, and honey in a blender.

  5. 5

    Blend until smooth.

  6. 6

    Pour the filling into the crust and refrigerate for 2 hours, or until the filling is set.

  7. 7

    *Silken tofu is soft and custardy. Look for it fresh in the refrigerator aisle.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
