  1. 1 cupMarinara Sauce
  2. 1 smallYellow Onion
  3. 1 smallEggplant
  4. 1 mediumZucchini
  5. 1 mediumYellow squash
  6. 3 mediumRoma Tomatoes
  7. 1 pinchSalt & Pepper
  8. 1/2 tspDried Basil
  9. 1 cupShredded mozzarella
  10. 1/2 tspDried Oregano

    Preheat Oven to 400°F

  2. 2

    Spread 1/2 cup marinara over the bottom of a deep pie dish or rectangular casserole dish.

  3. 3

    Thinly slice onion and sprinkle over marinara

  4. 4

    Thinly slice eggplant, zucchini, yellow squash, and tomatoes (about 1/4" thick) slice pieces in halfs or quarters to make similar in size. Layer in casserole dish like dominoes.

  5. 5

    Sprinkle salt, pepper, oregano, and basil over vegetables. Then pour remaining 1/2 cup marinara over everything.

  6. 6

    Cover with tin foil and cook for 30 minutes

  7. 7

    Remove tin foil, sprinkle mozzarella and return to oven for 10-15 minutes until cheese is melted and golden brown.
