Toast the kataifi pastry in clarified butter or ghee.

Lay out 2 sheets of phyllo dough and brush them with clarified butter or ghee.

Place 2 tablespoons of kataifi pastry on the phyllo dough, roll it up, and cut into small cubes.

Arrange the pieces in a buttered baking pan, then brush the tops with more clarified butter or ghee.

Bake in the oven until the bottoms are golden, then turn on the broiler to brown the tops.
- 6
Pour cold simple syrup over the baklava as soon as it comes out of the oven.
