We had chicken and ingredients from garden with butter in fridge... We were on a farewell date before departing from each other and created this yummy concoction from our own ideas starting with scampi sauce and added from there and prepared the chicken similar to a German dish of prep.   1. Sauce
  2. 1/2 cupButter
  3. 2 cloveGarlic sliced thinly
  4. 2 pinchFresh basil
  5. 2 tbspCream cheese
  6. 1/4 cupLemon Juice
  7. 1 tspPepper
  8. 1/2 cupDiced fresh tomatoes
  9. 3 tbspSkim milk
  10. 1 tbspOlive Oil
  11. Chicken
  12. 4 largeChicken breast
  13. 3Eggs (beaten)
  14. 1 pinchSalt & Pepper
  15. 1/2 cupBread Crumbs
  16. 1/2 cupParmesan Cheese shredded
  17. 1 tbspOlive Oil
  18. 1/2 cupMozzarella cheese cube and chopped
  19. Pasta
  20. 1Pasta (spaghetti or angel hair - yum)

Steps

    Turn oven onto 400°F

  2. 2

    Cut the chicken breast in half lengthwise

  3. 3

    Put chicken in plastic ziplock bag

  4. 4

    Beat chicken & pound chicken to flatten the breast

  5. 5

    Lay chicken on plate and salt and pepper both sides

  6. 6

    In a separate plastic ziplock bag, Put breadcrumbs & Parmesan shredded cheese

  7. 7

    In bowl, beat eggs

  8. 8

    Dip chicken in egg and then shake in bag of goodness, lay on plate to prepare for olive oil on stoce

  9. 9

    Medium heat olive oil

  10. 10

    2min each side of chicken in olive oil to golden brown (locks in chicken juice) and crisps side

  11. 11

    Place chicken (golden brown) into baking dish

  12. 12

    Cover chicken with mozzarella cheese cubed / shredded and cover chicken under each other and on top (see photo)

    Place chicken in oven for 20min on 400

    SAUCE:

    Medium heat: melt butter, add garlic sliced thinly, add basil cut into thin slices, add lemon juice, add pepper --- let ingredients cook

    After garlic is light brown, add olive oil, cream cheese and milk. Allow cream cheese to melt

  17. 17

    Add tomatoes and stir.. Stir stir stir and now simmer to a light boil to thicken the sauce (via evaporation). Approx 10min of yummy goodness

    Cook up the pasta with olive oil dash and salt

    MEAL IS READY: place pasta on plate, drizzle with sauce, place chicken breast on top, drizzle with saucey goodness, and garnish with shredded Parmesan cheese and a basil leaf. Enjoy of our yumminess
