Preheat broiler to high.

Cut both bacon slices in half. Add to medium skillet over medium-low heat and cook for 4-5 minutes on each side, or until cooked through. Remove and place on paper towel to absorb excess fat.

Sprinkle both sides of chicken breast with salt and pepper and add to skillet with remaining bacon fat. Increase heat to medium and cook for 6-7 minutes on each side, or until cooked through.

Meanwhile, slice Italian bread in half to create a top and bottom piece. Lay on baking sheet cut side up and place under broiler for 3 minutes or until lightly toasted.

On bottom half of toasted bread, smear Dijon mustard and add blue cheese. Place cooked chicken on top, followed by cooked bacon. Top with top piece of bread and serve.
