  • 500 gramsvanilla ice cream, see my profile for a dairy/soy-free recipe
  • 100 gramsmarzipan
  • 4 tbspcranberry sauce
  • 40 gramsdried cranberries

Steps

  1. 1

    Let the ice cream sit out to soften a little or put it in the microwave for a few seconds

  2. 2

    Dice the marzipan into small pieces around half the size as the dried cranberries

    Mix the marzipan, cranberry sauce and dried cranberries into the ice cream

    Put into a container and freeze until set

  5. 5

    Serve with Simnel cake at Easter and goes well with Christmas pudding if you're not a brandy sauce lover. I sometimes add chopped pistachio nuts for extra colour if serving on it's own
