at the same time, add cheese and milk to a saucepan. cook on low until cheese is smooth

in a large pot boil water covered

when water boils, slowly add grits so they don't clump

turn heat to lowest setting. simmer for a couple minutes until grits are tender

add cheese and vegetables

serve immediately
