Remove beef from package, do not rinse.

Chop your thyme and garlic... Use a peering knife to pierce about 6 places in the beef... Stuff the garlic and thyme in the holes.

Mix all dry ingredients together and rub in the beef loin...

Hot a 1/2 table spoon of oil in a heavy skillet...

Add the beef loin and brown on each side.. About 5 minutes...

Transfer the beef to a banking dish or you can use ur skillet if it's oven proof...

Rest the Rosemary on top of the beef..Optional: potatoes, carrots, or any vegetable you want to help bring out the flavors.

Cover with foil and Bake at 180°F for 2hrs for well done 1.5 hrs for medium rare..

Pour drippings into a sauce pan. Add a half tea spoon of corn starch and simmer to your desire gravy texture.

I adjusted it a little to suit the small ovens in Japan.Important hints: Do not add salt into the bag (otherwise the meat toughens). Do not pre-heat the oven. This is really great for serving to guests!If you like a slightly sweet sauce, reduce the sake and make up the difference by adding mirin. Be sure to brown the meat well, so that it's almost charred. The simmering time depends on the shape and volume of the meat. (For 500 g, simmer for about 8 minutes.) Leave the meat in the sauce as it cools so that the flavors from the sauce will penetrate.
