Ingredients

  1. creamed spinach
  2. 1/4 cupfinely diced onion
  3. 3 cloveof minced garlic
  4. 1 tspcrushed red pepper flakes
  5. 1 tbspbutter
  6. 1 1/2 tbspflour
  7. 1 1/4 cuphalf and half
  8. 4 ozcream cheese
  9. 1 tspsalt
  10. 1one pinch of nutmeg
  11. 1 lbfrozen box of spinach / thawed and squeezed of all it's liquid.
  12. 1/2 cupshredded romano cheese / divided

Steps

  1. 1

    In a large pan, saute the onion, garlic, red pepper flakes in butter.

  2. 2

    Whisk in flour.Saute 3 minutes to cook out raw flour taste and add a golden color.

  3. 3

    Whisk in half and half, bringing to a boil.

  4. 4

    Keep gently wisking until starts to thicken. Reduce to low heat.

  5. 5

    Now add the cream cheese, salt, nutmeg

  6. 6

    Stir in spinach and half of cheese. Mix well. Add more half and half if it is to thick.

  7. 7

    Best served Hot with sprinkled remaining half of cheese and fresh ground pepper.
