We love this roast pork! Its fairly easy and your home smells wonderful while its cooking because of the earthy oregano.The leftovers go really well in a sandwich also!

We love this roast pork! Its fairly easy and your home smells wonderful while its cooking because of the earthy oregano.The leftovers go really well in a sandwich also!

Ingredients

  1. 14-5 lb boneless pork shoulder roast
  2. 1/4 cupolive oil, extra virgin
  3. 2 tbspred wine vinegar
  4. 1/3 cupfresh oregano leaves
  5. 1 tbspeach salt(I use sea salt) and pepper
  6. 4 tspchopped garlic

Cooking Instructions

  1. 1

    Place pork roast in a baking pan and cut small slits around the whole surface. (If yours has a netting keep it on)

    Add all remaining ingredients to food processor and pulse for a good 30-45 seconds.

    Rub all over pork trying to rub into small slits you've cut.

  4. 4

    Marinate for at least 3 hrs or even overnight.

  5. 5

    Remove roast pork and allow to come to room temperature. About 30 minutes. Preheat oven to 350. Cook in oven for 3 hrs or until the outside of roast is a crispy brown. Let rest for 30 minutes before carving.
