Ingredients

  1. Base
  2. 2onions (small, sweet, yellow, chopped small)
  3. 1/2onion (large, purple, chopped rough)
  4. 1carrot (chopped chunky)
  5. 2celery stalks (chopped, chunky)
  6. 12 ozmushrooms (baby Bella, some stems removed)
  7. 1/4 cupgrapeseed oil
  8. 4 ozolives (black, sliced)
  9. 1 cancorn (sweet, drained)
  10. 1 canbeans (navy, drained)
  11. 1 canbeans (red, drained)
  12. 1 canbeans (black, drained)
  13. 1 canbeans (kidney, drained)
  14. 1 canbeans (pinto, drained)
  15. 1 cantomatoes (diced)
  16. 1 cantomatoes (rotel)
  17. 12 ozbeer (brown, or dark - I use Newcastle)
  18. 3 envelopeChili Seasonings
  19. 1/4 cuphoney (or brown sugar)
  20. 1 tbspchocolate powder
  21. 1pepper (bell, orange)
  22. 1pepper (bell, red)
  23. Optional
  24. 1Shredded Cheese
  25. 1White Rice
  26. 6chipotle peppers
  27. 1 bunchonions (green, chopped)
  28. 1 bunchCilantro (chopped)
  29. 1sour cream
  30. 1Tortilla Chips

Steps

  1. 1

    Sautee yellow onions over medium high heat with grapeseed oil until brown and see through.

  2. 2

    Combine all other non optional ingredients into giant crockpot. Bring to boil, turn heat to low.

  3. 3

    Add sauteed onions to crock pot mixture. And chipotle peppers.

  4. 4

    Cook on low until vegetables are desired texture / consistency. Three to Four hours, stirring occasionally.

  5. 5

    Serve with rice, salad, chips, cornbread, or by itself.

  6. 6

    Garnish with cilantro, green onions, cheese, sour cream, salsa.
