Slow Roasted Pork Shoulder

Preheat oven to 325 F

Cover bottom of a large Dutch oven with oil

Place onions scattered to cover the bottom of the Dutch oven

Place roast on top of onions

Season all over roast with the salt, pepper, and garlic

Place roast fat side up and cover Dutch oven

Roast for 4 hours
- 8
Remove lid after 4 hours, raise oven temp to 400 F and roast one more hour. If there is not much liquid in the bottom of the pan, add a cup of water so it doesn’t burn before roasting the last hour.

Let roast rest for at least 15 minutes before serving.

I served this with a fresh made cranberry orange sauce, curried rice, and sautéed veggies.
