Paleo (banana & Egg) Pancakes

My husband and I first tried paleo in mid-to-late 2011, and were incredibly successful (having lost 17 lbs. in five weeks!). We enjoy eating all natural ingredients, and feel that it has overall changed our lifestyle, and way of engaging with one another in the kitchen. These turned out amazing, and I'd highly recommend making them. They took roughly 20-25 minutes to make six pancakes, at a relatively high heat.

While on holiday in France, I wanted to make my partner’s mum some pancakes as a thank you for hosting us. France has some incredible local products, including this buckwheat flour which makes delightfully springy pancakes. A couple of extra ingredients on hand makes these a wonderful brunch to have in the sun. Genna
