I had never dared to prepare the quintessential Spanish tapa, the delicious bravas!! In fact, it's the typical dish I always order when I go out for tapas, haha. After making these, I might not order them out anymore because they turned out amazing at home!! Perfect for this week of #tapas.

I had never dared to prepare the quintessential Spanish tapa, the delicious bravas!! In fact, it's the typical dish I always order when I go out for tapas, haha. After making these, I might not order them out anymore because they turned out amazing at home!! Perfect for this week of #tapas.
Cooking Instructions

Start by making the sauce. Heat some olive oil in a pan and grate the onion. Sauté with the chili peppers for a few minutes, then season with salt and pepper.

When the onion is golden, add the hot paprika and saffron threads. Sauté for a few seconds without burning, then add the fried tomato sauce.

After a couple of minutes, add the crushed tomatoes and let simmer for about 45 minutes on low heat. Remove the chili peppers, add the soy sauce, adjust the salt and pepper, and blend well for a smoother texture.

The trick with the potatoes is to cook them twice. First, cut them into uneven chunks and boil in plenty of boiling water for 10 minutes.

Drain the water well (otherwise the oil will splatter) and fry them in hot olive oil until golden. Turn up the heat to high to remove any excess oil.

Place them on a plate with paper towels, and they're ready to serve with a generous amount of our brava sauce on top😋 I also made homemade mayonnaise! I hope you enjoy them as much as we did. I prepared them for a family meal, and they were a hit.

Patatas bravas--crispy potatoes served with a spicy, paprika-forward tomato sauce--are standard fare at any tapas restaurant. As simple as they are to make (and they really, really are simple), there's a lot of variation in the method. The recipe below includes my personal preferences. I use mini creamer potatoes, first because I like the texture, and second because they're easier to prep (i.e. just cut 'em in half). Next, I shallow fry my patatas. Again, this is for simplicity. I see no reason to pull out the deep fryer just to crisp up a few potatoes. Lastly, I like to mix a little mayo into the bravas sauce. I find it rounds out the flavour. Of course you can omit this step, or serve the mayo separately (or better yet, make homemade spicy aioli). However you make them, patatas bravas make for a delicious starter to a meal. Apparently, there are various kinds of prepping patatas bravas such as fried, baked, etc. This is the way I make it. This is one of the recipes I made when I had a bumper crop of new potatoes and was making lots of recipes using new potatoes. .Make sure to cook down the sauce until the liquid is gone and cook the potatoes until crispy.
