Ingredients

  1. 500 gramsgrape leaves, boiled and drained
  2. 4 kilogramszucchini, washed, cleaned, and cored
  3. 1 kilogramfatty lamb meat
  4. Tail fat
  5. Bones with some meat left on them
  6. leavesBay
  7. sticksCinnamon
  8. 1/2 kilogramlemon juice
  9. Cinnamon
  10. Black pepper
  11. 7spices
  12. Spices for the meat:
  13. 2bouillon cubes
  14. For the stuffing:
  15. 1 kilogramcoarsely ground fatty lamb meat
  16. 1 kilogramEgyptian rice
  17. Black pepper
  18. 7spices
  19. Salt
  20. Cinnamon
  21. 1little dried mint
  22. 1 pinchsumac
  23. Frying oil
  24. 1/2bouillon cube
  25. Water

Steps

  1. 1

    To prepare the stuffing: Wash the rice well and drain it. Add the meat, remaining ingredients, and oil, and mix well until combined.

    Place the meat, tail fat, and bones at the bottom of the pot.

  3. 3

    Distribute the cinnamon, bay leaves, bouillon cubes, and spices over them.

  4. 4

    Start rolling the grape leaves and arrange them neatly over the meat.

  5. 5

    Stuff the zucchini and place them on top of the grape leaves.

  6. 6

    Add salt and cover them well with water. Let them cook for about 1 1/2 to 2 hours until done.

  7. 7

    Add the lemon juice and let them cook for about 10 minutes before removing from heat.

  8. 8

    Carefully pour the remaining broth into a bowl.

  9. 9

    Flip the dish onto a large, deep tray, then add the broth and serve.

    Note: I press the grape leaves with a plate and something heavy before adding water to prevent them from scattering.
