Ingredients

24 servings
  1. 8 ozDark Chocolate (60%), chopped
  2. 1/2 tspvanilla extract
  3. 1/3 cupStout Beer
  4. 3 tbspUnsalted butter
  5. 3large eggs
  6. 3/4 cupgranulated sugar
  7. 1/4 cupDark Brown Sugar
  8. 4 ozbread flour
  9. 2 tbspunsweetened cocoa powder
  10. 1 tspespresso powder
  11. 1/4 tspbaking powder
  12. 1/4 tspkosher salt
  13. 1 tbspcornstarch
  14. 1 cupsemisweet chocolate chips
  15. 1/4 tspcoarse sea salt (Optional)

Steps

  1. 1

    Double boiler dark chocolate. Stir in beer and vanilla, let cool to room temperature.

  2. 2

    Cream butter and sugar. Add eggs, high until very light and fluffy. Add chocolate.

  3. 3

    Separate bowl, sift dry goods. Add to wet goods. Stir in chocolate chips.

  4. 4

    Cover, refrigerate for 30 minutes up to 24 hours.

  5. 5

    This step is optional. Sprinkle sea salt on tops of cookie dough before putting in oven.

  6. 6

    375°F oven for 12 minutes
