I haven't found the perfect frosting, so I'm open for suggestions! I'm going to try the Buttercream frosting posted by fenway next time I make them! :)

Ingredients

  1. 1 1/4 cupap flour
  2. 3/4 cupsugar
  3. 1/2 tspbaking soda
  4. 1/2 tspsalt
  5. 1/2 tspcocoa powder
  6. 3/4 cupvegetable oil
  7. 1/2 cupbuttermilk, room temp (or 1/2c milk with 1/2 tbsp white vinegar)
  8. 1egg, room temp
  9. 1/2 tbspred food coloring
  10. 1/2 tspwhite vinegar
  11. 1/2 tspvanilla extract

Cooking Instructions

    Preheat oven to 350

    Line 1 (12 cup) muffin pan with cupcake papers

  3. 3

    In medium bowl, sift together flour, sugar, baking soda, salt & cocoa powder

  4. 4

    In a large bowl, beat together oil, buttermilk, egg, food coloring, vinegar & vanilla on low speed until blended

  5. 5

    Add dry ingredients; beat on medium speed for 2 minutes

  6. 6

    Pour batter evenly into cups (batter will be very thick)

  7. 7

    Bake 20-22 minutes, turning pan halfway through

  8. 8

    Cool completely on cooking rack before frosting!
