Latin eggs

Some days are Sunday's and you just want to take your time on making you first meal for the day. This recipe gives the ordinary eggs and toast a whole new twist. It's indulgent yet very healthy. This was inspired by my love of all things that have tomatoes. I grew up eating tomatoes I'm practically obsessed with it. I could never resist eating them either raw or cooked. Why wait for snack time or lunch to have a good serving of salsa when you can have it for breakfast. I just love the mixture of the rich taste of the eggs against the tangy and fresh taste of the salsa. The addition of paprika gives the salsa a depth of flavour with its smoky slightly hot taste. So I hope you would try this recipe!

Fry/pouch the eggs then set aside.

Lightly butter the 2 pieces of the whole wheat bread. And place on a clean plate topped with the fried/pouches egg, 1 egg for each slice of bread. Set aside.

On a separate bowl add the onions, tomatoes, celery, bellpepper, chopped dried red pepper, and coriander.

Add in the mixture the spices: paprika, lemon juice, honey, oil, salt, and pepper.

Mix thoroughly until all are coated with the oils and spices. Taste and adjust accordingly.

Take off the eggs from top of the toast. Scoop out some of the juice of the salsa and soak the toasted bread with the juice.

Put back the eggs and top generously with the salsa.
