Ingredients

  • 6 largeGreen bell peppers
  • 1/2 lbOrzo pasta (uncooked measurement-half of a one pound box)
  • 8 ozFresh spinach, uncooked weight
  • 15 ozCan of diced tomatoes
  • 1 cupDiced onion
  • 6 cloveGarlic, minced
  • 1/3 cupOlive oil
  • 1 tbspDried basil
  • 1 tspBlack pepper
  • 8 ozFeta cheese, crumbled
  • 2 cupShredded mozzarella cheese or Italian blend

Steps

  1. 1

    Clean peppers and cut in half from top to bottom. Creating 12 halves. Clean out the stem, seeds and ribs.

  2. 2

    Cook orzo according to box directions, but undercook it a few minutes, since it will continue to cook in the oven.

  3. 3

    Meanwhile, in a skillet, cook the onion in the olive oil until tender and translucent. Add the garlic and other spices. Cook one minute...careful not to burn the garlic.

  4. 4

    Add the spinach, torn up a bit into smaller pieces. Stir and cook over low heat until wilted.

  5. 5

    Add the can of tomatoes and the cooked and drained pasta.

  6. 6

    Add in the crumbled feta and stir well. Taste and adjust seasoning as desired.

  7. 7

    Stuff the pepper halves with the orzo mixture. Place in a large casserole dish.

  8. 8

    Sprinkle tops with the grated cheese.

  9. 9

    Bake at 350 for about 30 minutes.
