Repeat until the potato is soft, but not squishy.

Remove from oven and remove outer skin if desired, otherwise, let cool completely.

Slice into discs about 1\4" thick

Lay evenly on a tray in a 140°F oven or food dehydrator for 8-12 hours, or until completely dry.

Store in cool, dry location up to 6 months
