Ingredients

  1. 4eggs
  2. 1/2 mediumonion, chopped
  3. 2 rashersrindless smoked bacon diced
  4. 1tomato diced
  5. 1 cupmature chedder chesse grated
  6. 1 tbspolive oil
  7. to tastesalt n pepper

Steps

  1. 1

    Whisk eggs until foaming

  2. 2

    Heat oil in a frying pan add bacon and onion and gently saute

  3. 3

    Add diced tomatoes whisked eggs cheese salt n pepper cook until bottom of omelette is set

  4. 4

    Place frying pan under a heated grill (broiler) until omelette is set and cheese is brown and bubbly

  5. 5

    Serve with some hot buttered toast and a cup of coffee and enjoy
