I didn't have time to cook it in the steamer, but it turned out delicious.

Wash and drain the chicken, then place it in a bowl.

Cook the tomatoes.

Blend the tomatoes, garlic, onion, chiles, and chicken bouillon cube. Pour the mixture over the chicken, using the vinegar and chile cooking water to help blend.

Add the bay leaves, avocado leaves, and thyme.

Cover tightly with plastic wrap and refrigerate overnight.

Line the bottom of the pressure cooker with banana leaves, add the chicken and sauce carefully. If needed, add more water.

Cover with more banana leaves and seal the pressure cooker.

Cook over low heat for 1 hour, or until the pressure cooker whistles. Transfer the chicken to another pot, removing the leaves.

Taste and, if the sauce is too acidic, add cola to balance the flavor.

Add 3/4 cup tequila (180 ml), and let it simmer for 5 more minutes to cook off the alcohol.
