When we were in Saint Lucia we met a lot of amazing people who invited us into their homes. This was Rasta Charlie's risotto style rice that he serves with spicy grilled lobster and veggies. So delish!

When we were in Saint Lucia we met a lot of amazing people who invited us into their homes. This was Rasta Charlie's risotto style rice that he serves with spicy grilled lobster and veggies. So delish!

In a pot, heat coconut oil and add onion and garlic.

Once the onion is translucent, add the ginger and rice. Mix together to infuse the rice.

Add the coconut milk and stir, then add a can of water (using the coconut milk tin)
- 4
Mix and bring to boil, reduce heat to medium low, place lid on pot and cook 12 min. *stirring occasionally*
- 5
Stir after 12 min, then leave the lid slightly off the pot and turn to low heat and cook another 12 min. *stirring occasionally*
