Ingredients

10 servings
  • 1 cuponion, sweet red yellow orange peppers, chopped
  • 1/2 packagessmoked sausage (your choice)
  • 1tomato
  • 1boneless chicken breast
  • 2small chicken boullion cube
  • 1small beef boullion cube
  • 1 packagesmedium gulf shrimp
  • 1 packagesshelled crawfish tails Bordeux brand
  • 2 canlump white crabmeat
  • 1 lbbay scallops
  • 1 cantomato soup
  • 1/4 cupall-purpose flour (for Roux)
  • 1/8 cupvegetable oil
  • 3 slicebutter (for roux color)
  • 1 tbspcajun or creole seasoning
  • 1 tbspGumbo file (optional for those who don't like Okra)
  • packagesfrozen Okra (Optional)
  • 1 cupchicken broth

Steps

120 mins
  1. 1

    Cook oil and flour to make Roux. Keep flour and oil on low stirring periodically to keep from burning. Butter helps to darken the Roux. (Can be baked in oven until desired color too!)

  2. 2

    Once Roux is desired color, add all vegetables, sausage, chicken, and all seasonings. Cook 20 minutes.

  3. 3

    Add chicken broth, diced tomatoes and tomato soup cook 30 minutes stirring occassionally

  4. 4

    Add lump crab, crawfish, shrimp cook 10 minutes

  5. 5

    Add bay scallops (medium to small) your desire

  6. 6

    Add Gumbo File (optional) cook another 10 to 15 Mins

  7. 7

    Eat with Rice or Oyster crackers
