Black Pepper Stir Fried Noodles

If you want to double this for more people, only increase soy sauce, corn starch, garlic and cooking wine by half of the amount shown.
Use the black pepper amount that is right for you. I used 3 tsp and it was too much for my wife, and had some bite to it for sure. But I loved it. Very heavy black pepper flavor. 1 - 1 1/2 tsp. might be a better starting point for most people. Careful with the garlic also, it can also add a bite to the sauce.

Ingredients

  • Black Pepper Sauce
  • 1black pepper (1/2 - 3 tsp)
  • 4 tbspsoy sauce
  • 2 tbspwhite cooking wine or Mirin
  • 1 piecefresh ginger about 1 inch long
  • 4 clovegarlic
  • 1/2 tspcorn starch
  • Main
  • 1/2 lbground meat or tofu, cubed
  • 1 smallhead of napa cabbage
  • 1/2 largeonion, chopped
  • 10 ozspinach fresh (optional)
  • 4 ozdried noodles, I like rice, but egg work well also
  • 2 tbspvegetable oil

Steps

    Soak noodles in water (room temp) for about an hour

    Pour a couple tablespoons oil in a large skillet, wok or stir fry pan. Turn heat to medium high.

    Once the oil is heated, cook meat, chopping it up, or fry tofu cubed on all sides.

    Once meat/tofu is just cooked, add chopped onion

    Chop cabbage across in 1/4-1/2 strips, so it is kind of noodle looking

    When the onions are mostly cooked, translucent, add cabbage, and spinach if using.

    When cabbage is wilted, drain noodles and add, turn heat down to medium.

    Stir for a few minutes to get it all hot

    Mix all sauce ingredients in a blender or food processor until well blended.

  10. 10

    Add sauce to pan. Stir to mix well. Keep stirring for about 2 or 3 minutes to allow sauce to thicken.

    Serve. Use sesame seeds, chopped green onion, cilantro to garnish if desired.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
