Ingredients

  • 1 lbtomatillos (8 or 9), husk removed, rinsed and dried
  • 1onion (8 ounces), cut into eighths
  • 1 tbspolive oil
  • 6 clovegarlic, peeled and each clove cut in half lengthwise
  • 1 bunchcilantro, cleaned (2 ounces of tops), chopped
  • 3jalapeños, stems removed and each cut in half lengthwise
  • 1 tbsplime reduction (zest of 1 lime and 1/4 cup lime juice reduced to 1 tablespoon liquid)
  • 1salt to taste
  • 1pepper to taste

Steps

  1. 1

    Place a heavy bottomed saute' pan over high heat.

  2. 2

    In a bowl, toss the tomatillos and onion together.

  3. 3

    Season with salt and pepper and add oil to pan.

  4. 4

    When pan is really hot, sear mixture, turning and blackening for 5 minutes.

  5. 5

    Add garlic and jalapeños and cook 3 minutes.

  6. 6

    Remove from pan to a food processor or blender and let cool.

  7. 7

    Add cilantro and lime and pulse until chunky and the size of peas.

  8. 8

    *This recipe makes about 2 1/2 cups.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
