Zesty White Bean Dip

This basic bean dip is easier to make than a homemade hummus and is one of my favorite go-to spreads for bread. It has quite a bit of garlic, so if you're not too crazy about garlic, reduce to 3 cloves. I have also made other variations using different herbs, chiles and even Tabasco that are equally as delicious. Feel free to add your favorite herbs! If you are using canned beans, one can will do the job.

Ingredients

  1. 1 1/2 cupwhite beans (cannellini, navy, etc.)
  2. 6 clovegarlic
  3. 6 largeleaves fresh basil
  4. 1 largelemon (juiced)
  5. 1/3 cupextra virgin olive oil
  6. 1/2 tspsalt (or more to taste)
  7. 1/4 tspfreshly ground pepper

Cooking Instructions

  1. 1

    Place the beans in a colander and rinse well.

  2. 2

    Add all the ingredients, except the basil, to a food processor or blender and puree until smooth.

  3. 3

    Add basil leaves and blend until basil is well incorporated.

  4. 4

    Enjoy!
