These are a staple in my constant calorie counting life. Took the best of 3 recipes & tweaked
Cooking Instructions

Preheat oven to 375. Line baking sheet with parchment paper

In large mixing bowl combine all ingredients. (Mixture will be wet). Portion out to 1oz. meatballs. (I have a 1oz. Scoop for cookies that is perfect)

Arrange on cookie sheet - don't overcrowd! They will give off a lot of moisture. I usually bake in 2 to 3 batches

Bake 35 - 50 minutes, turning every 15 min. (Really depends on the size of your meatballs & your oven's "personality"

After they cool completely I portion out to single servings & freeze. I can grab a bag of 4 out of the freezer & they are thawed by lunch. I eat them warm or cold; by themselves; with zucchini noodles; the possibilities are endless!
