I love this version of tuna salad sandwiches! I always incorporate fresh chopped vegetables to add both taste and crunch. Curry powder and a sprinkle of cayenne pepper make it taste amazing but are optional. I don't like a lot of mayo but feel free to adjust the amount of mayo to your liking. I recommend multigrain or chia bread, but use whatever bread you prefer. Sometimes I add chopped apples to the sandwich, try it if you dig a bit of sweetness with savory foods!

Ingredients

  1. 1 loafbread
  2. 1 headlettuce
  3. 4 tbsplight mayonnaise
  4. 370 gramstuna in spring water
  5. 3 eachlarge celery stalks
  6. 1 eachmedium carrot
  7. 1/2 eachcapsicum
  8. 1 eachshallot
  9. 2 tbspcurry powder
  10. cayenne pepper
  11. 1 bunchchives

Cooking Instructions

    Drain the water from the tuna (use the can lid to keep the tuna in the can) then empty the tuna into a medium mixing bowl.

    Add the mayonnaise to the tuna and mix with a fork, breaking up any chunks. Add more or less mayo than the recipe calls for to achieve your desired consistency.

    Cut celery stalks in half long-wise then chop finely. Add to the bowl of tuna.

    Finely chop the shallot and add to the bowl of tuna.

    Chop capsicum (bell pepper) into small pieces and add to the bowl of tuna.

    Use a vegetable peeler to peel the outer layer off the carrot and discard the peels. Finely grate the peeled carrot into the bowl of tuna.

    Finely chop chives and add them to the bowl of tuna.

    Add curry powder and cayenne pepper to the tuna (to taste).

    Lightly toast two pieces of bread for every sandwich you want to make. While they are toasting mix the tuna and veggies with a fork.

    When the bread is lightly toasted, spoon a thick layer of the tuna mix onto one slice, place lettuce on top, then top with a second slice of bread to finish off each sandwich!

    Refrigerate any leftover tuna mix immediately.

I like to cook as close to "from scratch" as is practical for an average gal like myself. That means lots of fresh veggies and herbs and rustic or authentic recipes. I try and grow my own vegetables but you really don't have to if you have access to a grocery store!I'm an American living Down Under so my recipes are probably often American inspired with an Aussie twist. I also love Asian cuisine!
