Chorizo Hash

Adapted from a recipe on unearthed.com I have used a leftover cooked potato in its skin. I usedd a Spanish chorizo picante, but you can virtually use any chorizo you like in this... I just have a thing for spicy breakfasts! :)

Adapted from a recipe on unearthed.com I have used a leftover cooked potato in its skin. I usedd a Spanish chorizo picante, but you can virtually use any chorizo you like in this... I just have a thing for spicy breakfasts! :)

Heat a non stick pan on a medium low heat.

Add the chorizo, and sizzle it until the orange oils of the chorizo starts coating the pan

Add the onion and cook for two minutes, then add the garlic and saute for more minutes
- 4
Add the potato, rosemary and smoked paprika. Season with salt and black pepper.

When everything is heated through, move everything around the edges of the pan, leaving a circle in the middle.

Add the egg, turn up the heat a little and start moving the egg around with a wooden spoon.

Don't worry if bits of the chirizo mixture get mixed in with the egg, that's fine.

Spoon onto a plate and serve hot!
