Caprese Frittata
I made breakfast this morning. It was great!
Cooking Instructions
- 1
Preheat oven to 375°F.
- 2
Clean your cherry tomatoes and slice them in half.
- 3
Slice the basil into bite-sized pieces.
- 4
Beat together eggs and cream with a little salt and pepper.
- 5
Melt butter to coat a non-stick pan.
- 6
Pour the beaten eggs into the warm pan.
- 7
Break up the mozzarella and scatter it over the eggs.
- 8
Similarly, scatter the tomatoes and basil over the eggs. Shake the pan or use a utensil to push the basil mostly below the surface of the egg.
- 9
Place the pan in the oven and bake for 10-15 minutes, just until the surface of the egg is set.

I had never eaten a frittata, let alone made one, but this wasn't terribly difficult and was an interesting way to have breakfast for dinner with ingredients I already had around the house. NOTE: You can remove the ribs/seeds from half or all of the jalapeno if you don't want the heat. hands.matt -

Caprese Salad Caprese Salad
One of my favorite summer dishes is Caprese Salad made with sun-ripened tomatoes, fresh mozzarella, and basil picked right from the garden. So flavorful (especially with garlic) and easy to make. Granny in the Kitchen -

Note- you don't have to reduce the Balsamic Vinegar if that step seems like too much for you. However, by reducing it, it gains this beautiful sweetflavor and thick consistency. Brees knees Recipes -
