This dish I made in memory of my mother & grandmother. Both had made this meal many times, but there never was a recipe. It was always just made by knowing how to cook & what was needed to make it be delicious. Always served with quality Italian bread that is used to dunk in the sauce & eat with the onions & mushrooms.

Ingredients

6 servings
  1. 6chicken thighs
  2. 6Italian sausages
  3. 6golden Yukon potatoes
  4. 1large Vidalia onion
  5. 4plum tomatoes
  6. 1 boxwhite button mushrooms
  7. 6 clovegarlic
  8. 2 cupPino grigio white wine
  9. 6fresh basil leaves
  10. olive oil
  11. salt & pepper

Cooking Instructions

  1. 1

    Add a little olive oil to a large saute pan on medium flame & add chicken, sausage & quartered potatoes for a few minutes & brown on both sides.

    Take out the chicken & sausage & cut the chicken in half through the bone & cut up the sausage in large chunks & return to the pan.

    Add sliced onions, diced tomatoes, sliced garlic & whole mushrooms & cook until onions are clear.

    Add wine, basil, salt & pepper. Put over on pan on low heat & cook for about 20 minutes depending on the size of the chicken thighs.

    Serve on family size platter in middle of table, Italian family style.
