Chicken Vegetable Soup with Vermicelli
I had some chicken soup in the fridge and was thinking about how to make it more filling and give it a different flavor than what I'm used to. This idea came to mind, so I decided to try it. If it turned out well, I planned to share it on my page so others could try it and give me their feedback. If it didn't work, I would just drink it quietly 😂. It really did turn out different from the usual, and I was so happy with it that I knew I had to share. I hope you all enjoy it! 😊
Chicken Vegetable Soup with Vermicelli

Place the chicken soup in a large pot, add 1 cup water (about 240 ml), and heat until warm.

Add the sliced vegetables and cook until the vegetables are tender.

Once cooked, let the mixture cool slightly, then blend until smooth. Pour back into the pot.

Return to the heat, add the bouillon cube and salt if needed, and heat through.

When hot, add the vermicelli noodles and cook for 5 minutes, or until the soup thickens to your liking.

Turn off the heat and serve hot.

If you don't have ready-made chicken soup, place chicken breasts or thighs in a large pot, add water to fill halfway, and add the following:

1/2 medium onion (diced), 2 large garlic cloves (sliced), the spices, vinegar, lemon juice, and bouillon cube.

Cook the chicken until done, then follow the vermicelli method as described above.
