Ingredients

  • 2chicken breast
  • 4Middle bacon rashers
  • 2Red chilli's
  • 2 tbspCrushed garlic
  • 2 stickRosemary
  • 1 pinchsalt
  • 1 pinchpepper
  • 1 dashmaple syrup
  • 2 tbspButter
  • 4 stickThyme
  • 4 stickSage

Steps

  1. 1

    Trim chicken breast and score inside.

  2. 2

    Finely dice chilli and herbs. Put in bowl with garlic and butter. Mix thoroughly and add salt and pepper.

  3. 3

    Lay a strip of bacon down and place a breast on top sideways at one end skin side down. Place chicken so bacon is to one end.

  4. 4

    Spoon a generous amount of herb mix on chicken and push into the scores.

  5. 5

    Roll the breast on bacon so that bacon wraps entire breast. Push wooden skewers in to hold bacon on breast as required.

  6. 6

    Drizzle maple syrup over bacon.

  7. 7

    Place bombs in roasting tray and bake for 45 mins to an hour.
