After all the holidays pass and heavy, calorie laden foods have been enjoyed, I dig out my healthy recipes. This is a super fast dip that packs flavor. I make big batches of all different beans. You can easily use canned beans here but please drain and rinse before using. Go ahead and snack without the guilt!

You can easily use canned beans here but please drain and rinse before using. Go ahead and snack without the guilt!
Cooking Instructions

In a processor, add beans, salt, cilantro, lime juice and vegetable broth. Blend just until smooth.

In a pan over medium heat add oil and just heat it up. Turn off heat under pan.

Add garlic and red pepper flakes. Let this "cook" in heated oil for 30 seconds.

Add this to processor and pulse once or twice.

Scoop into serving bowl and enjoy with chips. Baked chips will keep this on the lighter side.

If using canned beans, use two 15oz cans and drain well. Follow the rest of the recipe as normal.I make my bean dip with 6 chiles, which yields a spicier result. For your dip, you can follow these rough guidelines:2 chiles=mild3 chiles=medium4 chiles=medium spicy5 chiles=spicy6 chiles=SPICY!For a smokier flavor, use 1-3 chipotle peppers in adobo depending on the degree of spiciness you want. It'll definitely be a crowd pleaser!This dip is delicious served chilled, at room temperature, or piping hot. My personal preference is served hot. Thick, creamy, spicy, garlicky, packed with flavor and full of artichokes. What more could you ask for? So, after making this recipe far too many times, I've come up with quite a few notes about it:+ Use the shredded cheese of your choice. I generally use a creamy white cheddar, but I have had success with many other cheeses.+ You can use canned green chiles, but in my experience, the canned varieties tend to taste tinny. If you'll be roasting at home, you'll need 3-4 large fresh chiles placed over an open flame or under the broiler.+ 4 ounces of green chiles provides just enough kick. You'll want to keep in mind that canned chiles are generally more mild. The best way to be certain you're not making it too spicy or too mild is to taste as you're going along. I love enough spice to kick your socks off, so I go for an entire cup (8 ounces) of freshly roasted chopped green chiles! Izandro -
