Bean and Edamame Salad

Ingredients

  1. Main Ingredients
  2. 1 cankidney beans (15 oz )
  3. 1 canblack beans (15 oz)
  4. 1 cupfrozen shelled edamame (thawed)
  5. 1 1/2 cupfrozen sweet corn (thawed)
  6. 1/2red onion, finely chopped
  7. 4green onions, sliced
  8. 1small sweet red bell pepper, finely chopped
  9. 1/4 cupfresh cilantro, loosely packed
  10. Dressing
  11. 1/2 cupolive oil
  12. 2 clovegarlic, minced
  13. 1/4 cupred wine vinegar
  14. 1 1/2packets Splenda (or about 1tbsp white sugar)
  15. salt and pepper
  16. 1 tspchili powder
  17. 1 tspground cumin

Cooking Instructions

  1. 1

    Mix together the 8 main ingredients in a large bowl.

    In a small bowl, whisk together the dressing ingredients.

  3. 3

    Add dressing to bean and edamame salad and stir to mix well.
