Rajasthani Khooba Roti

Take wheat flour in a big bowl. Add salt, ajwain and ghee to it. Mix well.

Rub it with your fingers. mixture will be like bread crumbs.

Now add water and knead a stiff dough. Cover it with damp cloth and keep aside for half an hour.

After half an hour grease your fingers with ghee and knead the dough for 2 min.

Divide the dough in 4 equal portions. Make a ball from each portion.

Take one ball and roll it out into 1/2" thick chapati.

Heat the griddle. Put chapati on it.cook for 2 min. Flip it and pinch the chapati with your thumb and finger in a circular way.

When bottom layer turn light brown. Flip the chapati and cook for 2 min.

Now put off from the griddle and cook directly on the lowest flame.

When it cook properly. Pour desi ghee on it. Rest it for 2 min till the chapati absorbs ghee.

Serve hot with panchmel daal and lahsun ki chutney.
