This is a triple threat salad. You have your beans/chickpeas for protein and fiber, your nutrients from the veggies and a bit of your carbs from the pasta! Ingredients

  1. 3/4 cupsmall pasta shape
  2. 2Bell peppers, diced (any 2 colours)
  3. 1jalapeño, minced (optional, I like the kick)
  4. 1Green onion, diced
  5. 1 canchickpeas, rinsed and drained
  6. 1 canblack beans, rinsed and drained (or any other bean of your choice)
  7. Dressing/Vinaigrette
  8. 3 1/2 tbspwhole grain dijon mustard
  9. 1 1/2 tbspvinegar
  10. salt and pepper
  11. 2 tbspolive oil, extra virgin (more or less)

  1. 1

    Boil water and cook the pasta to your liking, drain and set aside.

  2. 2

    In a medium bowl, add your dijon and vinegar, then whisk vigorously your olive oil until it becomes the consistency of a nice dressing. (You'll end up playing between the vinegar and the olive oil)

  3. 3

    In a large bowl, combine your peppers, chickpeas and beans.

  4. 4

    Add half the dressing to the bowl of brands and veggies and mix.

  5. 5

    Add your pasta into the veggie/bean bowl the mix in the remaining dressing.
