Steps

Take the brinjals and wash it properly.

Roast the brinjals on a grill over a medium flame.

When the brinjals are properly roasted, take it out in a plate and allow it to cool.

When cooled, take off the burnt skin.

Mash the brinjals and keep it aside.

Heat a kadai, add oil to it. When the oil is hot add cumin seeds and hing and let it crackle.

Add the onions to it and fry till it turns golden brown.

Add the ginger-garlic-green chilli paste, turmeric powder, coriander powder to it and saute it.

Add the tomatoes and cook it till it turns soft and mushy.

Add the mashed brinjals to it and add the salt to it.

Mix the brinjal with onion tomato mix and cook for 5 minutes over medium flame. Add garam masala and turn off the flame. Add coriander leaves to it.

Baingan bharta is ready to serve. Serve it with roti or rice.
