Slice the Akawi cheese thinly and soak it in water to remove excess salt.

Pulse the kataifi dough in a food processor with the melted butter until well combined.

Spread the mixture evenly in a suitable baking pan. Place the pan over medium heat, stirring until the dough is cooked and turns golden (no artificial coloring needed).

Once golden, press the dough firmly into the pan and evenly distribute the drained, sweetened cheese on top, pressing gently. Avoid spreading cheese to the edges to prevent sticking.

Place the pan in the oven under the broiler until the cheese melts.

Prepare the syrup in advance: Combine 2 cups sugar, 1 cup water, lemon juice, and 2 teaspoons orange blossom water. Simmer over low heat for about 15 minutes.

Once the cheese has melted, remove the pan from the oven and invert the knafeh onto a larger serving tray. Pour the syrup over the top.

Garnish with ground pistachios and serve hot. Enjoy!
