preheat oven to 450

coat baking sheet with cooking spray

heat 1 1/2 tsp. oil in large nonstick skillet over Med. hi heat. add onions, celery;cook until softened, about 3 min. Stir in parsley; remove from heat.

place salmon in Med bowl. flake apart with fork. remove any bones and skin. ad mustard; mix well. add the onion mixture, breadcrumbs and pepper. mix well. shape into 8 patties about 2 1/2 inches wide.

heat remaining 1 1/2 tsp oil in the pan over Med heat. add 4patties and cook until the undersides are golden, 2-3 min. using a wide spatula turn them over onto prepared baking sheet. repeat with the remaining patties.
