1 lbBacon, chopped
1 largeonion, chopped
1 lbNavy beans, soaked overnight and drained
1 cupDark brown sugar
1/4-1/2 cup Bourbon
3 tbspDijon mustard, stone ground
2 1/2 cupWater

Saute bacon and onion until bacon is done.

Mix the brown sugar, mustard, water and bourbon until blended.

Add to bacon and onions, stir until blended

Drain the beans and add to the bacon mustard mixture

Simmer for 4 hours or on low heat in crock pot for 8 hours
