Steps

saute onions and garlic in a 10-in oven proof/microwave skillet or casserole dish.

Add potatoes, broccoli, red pepper and spices.

Add chicken broth to cook vegetables as necessary.

Cover and continue simmering for 5 minutes.

in a small bowl, mix eggs and milk.

Pour egg mixture over vegetables, sprinkle with cheese.

bake in oven for approx. 20 minutes or until center is cooked.

If time is a problem, finish off in a microwave for about 3 minutes.

Cut into wedges and top with salsa and serve.
