Ingredients

  1. 1/4 cupbutter or margarine
  2. 1/3 cupall purpose flour
  3. 1/8 tspseasoned salt
  4. 1 dasheach of salt and pepper
  5. 3/4 cupmilk
  6. 1 1/3 cupsharp cheddar cheese shreds
  7. 2eggs
  8. 1 cupfine dry bread crumbs
  9. 1oil (for deep fat frying)

Steps

  1. 1

    In a medium saucepan, melt butter, stir in flour, seasoned salt, salt and pepper.

  2. 2

    Add milk all at once.

  3. 3

    Cook and stir until thick and mixture just bubbles.

  4. 4

    Stir in cheese until nearly melted.

  5. 5

    Moisten plate with a little water; pour cheese mixture onto plate.

  6. 6

    Cover and chill at least 1 hour until firm.

  7. 7

    Using 2 spoons, shape mixture into sticks or croquettes.

  8. 8

    Dip into beaten egg, then in bread crumbs, then repeat.

  9. 9

    Heat oil to 365º.

  10. 10

    Deep fry 2 or 3 sticks or croquettes until golden (1 minute)

  11. 11

    Drain.
