Ingredients

  1. 250 gramschicken livers
  2. 2 tbspolive oil
  3. 1onion, finely chopped
  4. 3 slicebacon, chopped
  5. 2 clovegarlic, crushed
  6. 2bay leaves
  7. 125 gramsbrown mushrooms, chopped
  8. 1/4 tspgrated nutmeg
  9. 2 tbspsweet sherry
  10. 125 mltomato puree
  11. 250 mlhot chicken stock
  12. 1salt and little sugar to taste
  13. 1tabasco
  14. 250 gramscavatappi spirals
  15. 1finely chopped parsley

Steps

  1. 1

    Trim liers and rinse with vinegar water, pat dry and slice.

  2. 2

    Heat the oil in large pan, add the onion, bacon and garlic and cook until bacon is crisp and onion lightly brown. Remove from pan and set aside.

  3. 3

    Reduce heat and add livers and bay leaves. Toss till no longer pink, then add mushrooms, nutmeg and sherry.

  4. 4

    When sherry is boiled away, add tomato puree, stock, onion mixture and seasoning (except tabasco).

  5. 5

    Simmer for 5 minutes, stirring gently, until sauce thickens.

  6. 6

    Add to freshly cooked pasta, adding few drops tabsco.

  7. 7

    Serve sprinkled with parsley and a green salad
