Many years back, my sister in-law, Lakshmi had given me some recipes for a variety of cakes. She took special care to make copies of these recipes and ensured that she gave it to me before I embarked on the train from Hyderabad to Goa. I treasured these recipes dearly, hoping to make all of them, within a short frame of time. But that resulted in a couple of years. Nevertheless, my intent remained ever strong.
Finally, I tried the first cake from these recipe series, last week, which is Almond cake (Badam cake in Hindi) A simple and easy cake the prepare with some of the common ingredients available in one’s kitchen larder. Is’nt this a sweet way to meet your protein needs?
The soft crunch of almond coupled with the crumbly cake creates a culinary effect which is deeply satiating without masking it's inherent flavours.

Ingredients

  1. 1/2 cupAlmond powder (badam powder)
  2. 1/2 cupAll purpose flour (maida)
  3. 1/2 cupClarified butter (Ghee)
  4. 1/4-1/2 cupMilk
  5. 3/4 cuppowdered sugar
  6. 1/2 teaspoonbaking powder
  7. 1/2 teaspoonbaking soda
  8. 1/2 teaspoonvanilla essence or
  9. 1/2 teaspooncardamom powder (elaichi powder)

Steps

  1. 1

    Take ¼ cup of almonds and powder it in a blender.
    Add badam powder in a bowl, add 2 teaspoon milk to it and mix. Add sugar to it. Mix well and add baking powder and baking soda. Now add ghee and vanilla essence (or cardamom powder) Mix well.

    Pour milk slowly, mixing well. Ensure the batter is of semisolid consistency (just pourable) Take care not to add more milk as this cake tends to become very soft and crumbly.

    Transfer to oil greased cake tin, dusted with maids. Transfer the cake batter to this dish. Bake in a preheated oven at 175 degrees Centigrade for 20 – 30 minutes.

    Check in between with a toothpick, if the cake is baked. You can do so by inserting a toothpick, into the cake. If it comes out clean your cake is ready. Cool it and savour this protein-rich cake with a hot cup of tea!
