First, rinse the chickpeas and soak them overnight with the baking soda. Then, cook them on the stove until fully tender.

After the chickpeas have cooled, place them in a food processor. Add 1/4 cup of their cooking water, lemon juice, garlic, salt, and tahini. Blend well until smooth.

If the mixture is too thick, add a little more water.

Spoon the hummus onto a plate. Top with chopped tomato, a sprinkle of cumin and dried red pepper flakes, and drizzle with olive oil. Serve with tea. Enjoy!
