Ingredients

  • 1 lb새우
  • 2 1/3 cup육수 새우껍질,양파,당근,타임,화잍와인으로 만듬
  • 2 tbsp오일
  • 1/2each
  • 1/2 tbsp마늘
  • 1/3 cup와이트와인
  • 4 tbsp토마토 페이스트
  • 2 tbsp버터
  • 2 tbsp밀가루
  • 1 cup우유
  • 1 cuphalf and half
  • 1/2 tsp소금

Steps

    육수 만드는 법

    새누 1파운드 껍질,양파반개,당근2개,토마토 페이스트 1큰술다진마늘2작은술,타임1/2 큰술,물4컵와이트와인 반컵

  3. 3

    재료중 양파,당근 다이스

  4. 4

    새우껍질 벗긴후 육수내게 껍질은 모아둔다

  5. 5

    먼저 냄비에 오일넣고 양파 당근 새우껍질 넣고 십분정도 볶는다

  6. 6

    토마토 페이스트넣고 3분정도 더 볶는다

  7. 7

    타임도 넣는다

  8. 8

    물을 4컵넣고 중불로 줄인후 1/3정도 줄어들면 체에 받쳐 걸러낸다

  9. 9

    냄비에 오일 다진양파 넣고 볶는다

  10. 10

    카이엔 페퍼 한꼬집넣고 와인넣어 알콜 날려가며 볶는다

  11. 11

    다 볶은후 푸드프로세서에 간다

  12. 12

    같은냄비에 버터넣고 밀가루 2스푼 넣어 타지않게 볶는다

    전자렌지에 30초 정도 우유랑 해프앤 해프 데운다

    냄비에 부어 화이트 소스를 만든다

  15. 15

    화이트 소스가 걸죽해지면 새우 갈아놓은것 육수 부어준다

  16. 16

    절대 끓이지말것 토마토 페이스트 때문에 우유가 분리되어 몽글몽글해진다

  17. 17

    재료가 다 섞이면 불끄고 소금으로 간한다

    완성한후 생파슬리 좀 뿌려 바게트 빵을 곁들인다

  19. 19

    새우 다 갈지말고 나중에 가니쉬로 스프에 올린다
